        • Chocolate Chips: 1 cup (175g) semi-sweet or dark.

        • Chopped Nuts: 1 cup (100g) such as walnuts, pecans, or almonds.

        • Dried Fruits: 1 cup (150g) like cherries or cranberries.

        • Espresso Powder: 1 teaspoon to intensify chocolate flavor.

Wet Ingredients

    • Kefir: 1 cup (240ml)

    • Large Eggs: 2 large

    • Unsalted Butter: 1/2 cup (113g), melted (you can use vegetable or coconut oil)

    • Vanilla Extract: 2 teaspoons

Frosting and Glaze (Choose One)

    • Classic Chocolate Glaze:

        • Unsweetened Cacao Powder: 1/4 cup (25g)

        • Granulated Sugar: 1 cup (200g)

        • Milk: 1/4 cup (60ml)

        • Vanilla Extract: 1 teaspoon

    • Cream Cheese Icing:
        • Cream Cheese: 8 oz (225g), softened

        • Unsalted Butter: 1/4 cup (57g), softened

        • Powdered Sugar: 2 cups (240g)

        • Vanilla Extract: 1 teaspoon

Garnishes (Optional)

    • Whipped Cream or Vegan Whipped Topping

    • Additional chocolate shavings, cocoa powder dusting, or shredded coconut are also available.


Instructions

1- Preheat the Oven:

Set your oven to 350°F (175°C).

Prepare your baking pan by greasing it with butter or oil or line it with parchment paper for easy removal.

2- Prepare Dry Ingredients:

In a large mixing bowl, sift together:

2 cups (240g) all-purpose flour

1/2 cup (50g) unsweetened cocoa powder

1 teaspoon baking soda

1/2 teaspoon salt

3- Mix Wet Ingredients:

In a separate bowl, combine:

1 cup (240ml) kefir

2 large eggs

1/2 cup (113g) melted unsalted butter (or oil)

2 teaspoons vanilla extract

Whisk until the mixture is smooth and well blended.

4- Combine Dry and Wet Ingredients:

Gradually pour the wet mixture into the bowl of dry ingredients.

Use a spatula or wooden spoon to fold the batter gently, mixing just until combined. Avoid overmixing to ensure a tender cake.

5- Pour batter into the Pan:

Spread it evenly with a spatula to smoothie the surface.

6- Bake the Cake:

Place the pan in the preheated oven.

Bake for 25–30 minutes, or until a toothpick inserted into the center comes out clean.

Check for doneness starting at 25 minutes to prevent overbaking.

7- Cool the Cake:

Remove the cake from the oven and let it cool in the pan for 10 minutes.

Carefully transfer the cake to a wire rack to cool completely before applying frosting or glaze.

8- Frost and Serve:
