Ingredients

Scale

    • 4 large yellow chili peppers (aji amarillo) –

    • 1/4 cup, chopped fresh cilantro

    • 4, minced garlic cloves

    • 1 medium, finely diced onion

    • 1 teaspoon ground cumin

    • 1 teaspoon smoked paprika

    • 1/2 teaspoon dried oregano

    • 1 teaspoon salt (adjust to taste)

    • 1/2 teaspoon black pepper

    • 1.5 lbs (about 700 grams) chicken thighs (boneless and skinless)

    • 2 tablespoons vegetable oil

    • 1 cup chicken broth

    • 2 TB of lime juice

    • 1/4 cup of heavy cream (optional for a creamy sauce variation)

    • Sliced lime or chopped cilantro for garnish

Instructions

  1. Marinate the Chicken

In a bowl, mix lime juice, minced garlic, ground cumin, and aji amarillo paste. Coat the chicken pieces with the marinade and let it rest for at least 2 hours in the refrigerator. For a deeper flavor, marinate overnight.

  1. 2. Craft the Amarillo Sauce

Heat oil in a pan and sauté finely chopped onions and garlic until fragrant. Add aji amarillo paste and cook for 2-3 minutes. Stir in evaporated milk, crushed crackers, and chicken broth. Simmer for 10-15 minutes until the sauce thickens and is smooth. Adjust seasoning with salt and pepper to taste.

  1. 3. Cook the Chicken

  2. Heat oil in a pan over medium-high heat. Sear the marinated chicken pieces until they turn golden brown on both sides. Pour the Amarillo sauce over the chicken, ensuring it’s well-coated. Reduce the heat and simmer for 20-25 minutes until the chicken is cooked through and tender.

Juicy, golden-brown chicken pieces perfectly marinated and grilled, glistening with a flavorful glaze, placed on a rustic wooden platter for a mouthwatering presentation.

  1. 4. Serve

Plate the chicken and spoon the Amarillo sauce over it. Garnish with fresh cilantro for added freshness and color. Serve with your choice of sides. Enjoy your delicious Churu Chicken Amarillo!
