Ingredients

  1. Chickpeas (canned or cooked) – 1 can (15 oz) or 1 1/2 cups cooked
  2. Mayonnaise (or vegan mayonnaise) – 1/2 cup
  3. Dijon mustard – 1 tablespoon
  4. Lemon juice – 1 tablespoon
  5. Garlic powder – 1/2 teaspoon
  6. Salt – 1/4 teaspoon
  7. Pepper – 1/4 teaspoon
  8. Celery – 1/2 cup, finely diced
  9. Red onion – 1/4 cup, finely diced
  10. Pickles (sweet or dill) – 2-3 pickles, chopped
  11. Parsley (optional) – 2 tablespoons, chopped
  12. Dill (optional) – 2 tablespoons, chopped
  13. Avocado (optional) – 1/2, sliced
  14. Lettuce or spinach (optional) – A handful
  15. Bread (whole wheat, rye, gluten-free, or sourdough) – 2 slices or as needed
  16. Carrots (optional) – 1/2 cup, shredded
  17. Cucumbers (optional) – 1/2 cup, sliced
  18. Sunflower seeds or walnuts (optional) – 2 tablespoons

Instructions

  1. Prepare Chickpeas:
    Drain and rinse 1 can of chickpeas or cook dried ones. Mash them in a large mixing bowl, leaving some whole for texture.

  2. Make the Dressing:
    In a small bowl, mix 1/2 cup mayonnaise, 1 tbsp Dijon mustard, 1 tbsp lemon juice, 1/2 tsp garlic powder, 1/4 tsp salt, and 1/4 tsp pepper.

  3. Add Veggies:
    Dice 1/2 cup celery, 1/4 cup red onion, and 2-3 pickles. Add them to the chickpeas.

  4. Combine:
    Stir the dressing into the chickpea mixture until everything is well combined.

  5. Optional Add-ins:
    Add parsley, dill, avocado, or any other toppings you like.

  6. Assemble:
    Spread the chickpea salad on 2 slices of bread. Add lettuce or spinach if desired.

  7. Serve:
    Top with the second slice of bread, cut, and serve!
