Ingredients
Scale
- 1 ½ pounds boneless, skinless chicken breasts, chopped into 1-inch pieces (approximately 2 large breasts)
- 2 teaspoons Italian seasoning
- ¾ teaspoon salt
- ½ teaspoon freshly ground black pepper
- 1 tablespoon olive oil
- 3 tablespoons salted butter (you can use unsalted butter if you prefer)
- 4 garlic cloves, finely minced
- 2 tablespoons freshly squeezed lemon juice (about 1 lemon)
- 2 teaspoons lemon zest
- Chopped fresh flat-leaf parsley (optional for garnish)
Instructions
- Mix the oregano, basil, parsley, salt, and pepper in a small bowl. Sprinkle this mixture evenly over all sides of the chicken pieces, then toss to ensure they are fully coated.
- In a 12-inch skillet, heat 2 tablespoons of butter over medium heat.
- Once the butter is melted, add the chicken in a single layer to the pan, ensuring enough space for the pieces to cook evenly. Avoid overcrowding the skillet. Cook for 8-10 minutes, flipping the chicken halfway through, until the chicken is golden brown on all sides and mostly cooked through.
- Add the remaining butter to the pan. Once melted, stir in the garlic and cook for another minute until fragrant. Ensure the chicken reaches an internal temperature of 165°F.
- Drizzle the lemon juice over the chicken and stir to combine. Serve immediately with white fluffy rice or grilled veggies.
